Crispy Chicken Bites with Homemade Ranch Dressing

Simple to prepare and full of flavor these chicken bites and the homemade ranch dressing are great for parties and game day crowds (both kids and adults).

Ingredients

Chicken

1.5 cups Breadcrumbs, whole wheat, panko
2 Tbsp Parmesan cheese, grated
½ tsp Garlic Powder
½ tsp Thyme, dry
¼ tsp Salt
½ tsp Black Pepper, ground
3 ea Eggs, large
1 lbs Chicken breast, boneless, skinless

Ranch Dressing

1 cup Yogurt, Greek, low-fat
¼ cup Sour cream, low-fat
1/3 cup Buttermilk, non-fat
1 tsp Apple cider vinegar
½ tsp Sugar
1 ½ tsp Garlic powder
1 Tbsp Parsley, dry
4 tsp Chives, dry
1 tsp Onion powder
¼ tsp Salt

Instructions

Chicken

  1. Preheat oven to 400F. Line a baking sheet with parchment paper and spray with cooking spray.
  2. In a shallow bowl, combine the breadcrumbs, parmesan cheese, and spices. In a separate bowl, whisk together the eggs.
  3. Cut the chicken into bite sized pieces. Place each piece of chicken into the eggs, then the breadcrumb mixture.
  4. Spread chicken on the baking sheet. Bake until crispy and 165F internal, about 15 minutes
  5. Combine all ingredients in a bowl and whisk to combine.
